Bacon Wrapped Stuffed Jalapenos

There’s a double dose of heat with these cheese stuffed peppers with a touch of horseradish in the stuffing.

Thin sliced bacon is called for in this recipe, but if you are only able to find regular sliced bacon gently stretch out the slices of bacon and then wrap around each pepper.

1 dozen medium large fresh jalapeno peppers
6 ounces cream cheese, room temperature
½ cup grated sharp cheddar cheese
1 teaspoon prepared horseradish
1 green onion very finely minced
12 ounces thin sliced bacon

Cut each pepper in half and scoop out all of the seeds and membranes. Make the filling by combining all of the remaining ingredients except the bacon until smooth.

Divide the filling among the 12 peppers placing it in one half of each pepper and topping with the other half to enclose it.

Wrap a slice of bacon around each pepper slightly overlapping to cover the peppers completely. Secure the ends with a toothpick. Can be refrigerated at this point until ready to cook.

Grill over medium hot grill (or fry in a non-stick pan over medium heat) until bacon is cooked on all sides. Serve hot.

Makes 12 large appetizers.

      Any medium size chile pepper would be suitable. There are so many varieties around the globe; you’d just have to visit your fresh market and see what looks good. Bet you have something wonderful where you are!

      Here in the States our jalapeno peppers can vary from one locale to another. I have grown them in my garden in the past and have had peppers on the very same plant vary from mild to extremely hot depending on the time of the season.

  5. We usually make these several times a year but I never thought to add any extra kick like horseradish. Our friends can handle it, trust me. They’re all insane when it comes to eating foods with severe heat. I’ll bet it adds tons of additional flavor! It’s definitely getting added to my recipe next time…
