Lekvar Bars

Lekvar is a thick eastern European jam or fruit butter made from pureed prunes. It shows up in many European fine cakes, cookies and filled dumplings especially around the holidays. Here in the States, it can be found in most major supermarkets in the baking aisle near the other fruit fillings for baking. The best brands are imported from Europe.

This simple recipe is just delicious. Not too sweet, they go well with a cup of tea or coffee. They can also be made with an apricot filling which makes an equally wonderful bar.

1 cup butter

1 cup sugar

2 beaten eggs

1 cups ground walnuts

3 cups sifted flour

1 cup lekvar (prune butter)

1 cup powdered sugar 

Cream butter and sugar with electric mixer, add eggs. With a wooden spoon, add nuts and sifted flour. Take half and roll it out and place in on a greased 12 X 13 inch pan. Spread with a layer of lekvar. Roll out the rest of the dough and place on top. Bake at 350F until light brown (about 30 minutes). When cool, sprinkle heavily with powdered sugar and cut into squares.
