Feta Cheese Bites
Makes a lovely presentation when served with sliced tomatoes and olives on a buffet or as a salad course
1 lb feta cheese
8 oz cream cheese
3-4 tablespoons sweet paprika
¼ cup dried crushed mint
¼ cup black sesame seeds
Soak the feta cheese in cold water for 30 minutes to rinse some of the salt off. Remove from the water and press between paper towels to drain well. Place in the bowl of a food processor with the cream cheese and process till smooth.
Chill mixture for 30 minutes to firm up and roll into one inch balls. Roll each ball in either the paprika, mint or sesame seeds and arrange on a serving platter.
